Most Americans eat some kosher food every day, but chances are they're not aware of it. Take
a walk down the aisles of any supermarket and you will see that kosher certification appears
on over 60% of America’s produced foods that are certified kosher, from table salt to the
thirst-quenching Coca-Cola. Over $150 billion of kosher certified products are consumed
annually, and spending continues to rise dramatically.
The kosher symbol has become an increasingly important marketing device which generates additional revenues by expanding the size of the market. Supermarkets favor brands with certification because it gives the product a competitive edge that makes it sell faster. That also means that certification can lead to an increase in a company's private label business.
There is clear evidence that a kosher symbol boosts market share, that a kosher product can win more favorable shelf space, and that positioned next to a competing non-kosher brand, a kosher product will do better by 20%. This data has remained constant even in the smaller cities, far from heavier concentrations of kosher Jews. The consumption of Kosher products are increasing even among non-jews, as the industry grows.

There are four steps for starting certification:
a) Establishing a listing of kosher ingredients that are acceptable for use in your product
if it is to be certified. This list is known as Schedule A. The Florida 'K' staff carefully reviews and researches all ingredients issues, utilizing the registry of over 200,000 ingredients that have already been approved. Should it be necessary for a company to change or modify sources of supply for raw materials, locating a new source can usually be done very expeditiously through this extensive list or registry.
b) Establishing the list of brand names and specific products that will be authorized to bear the Florida 'K' symbol. This list is known as Schedule B. The Schedule B also indicates whether a product must bear a simple Florida 'K'logo (indicating that it is pareve, i.e., containing no meat or milk ingredients), an added 'D' (dairy), or an added 'P' (Kosher for use on Passover as well as all year round).
c) Establishing any special instructions that relate to the use of equipment, which is necessary if a plant engages in both kosher and non-kosher production, or both dairy and pareve production. These instructions may contain kosherization requirements, and/or
stipulations for segregation of production lines. There is also a certification requirement for food transports (trucks, tankers). A food transport kosher certification application is required to start that procedure.
d) Setting an appointment for the Rabbi to visit the certified plant at intermittent intervals, to verify that the Schedule A, Schedule B and special instructions are adhered to.
